Two Fabulous Post-Workout Breakfasts

If you're on-the-go and the clock is ticking, try my favorite post work-out breakfast - the go-to green smoothie! There is nothing better than feeding your body some nutritious high protein, high fiber treats. This smoothie can easily be made the night before or quickly in the morning.
 
 
 
Green Smoothie:
  • 2 cups Spinach or Baby Kale 
    • Avoid the bagged spinach- it tends to go bad VERY quickly.  Always go for the plastic carton organic spinach. As for the baby kale, Costco has a great variety of baby greens for a great price.
  • 1 cup coconut water
    • Get your coconut water from Target- much cheaper. Places such as Harris Teeter charge a couple dollars more. 
  • ½ banana
  • ½ avocado
  • ½ cup blueberries
  • ½ lime juice (this is especially essential if you're making the smoothie the night before)
  • 1 tablespoon Flax and Chia seed blend
*ProTip! Always blend your greens and coconut water first, then add your fruits. This critical step will save you a lot of time. 
 
If you have time in the morning, try my post-workout meal:
 
Egg scramble with seasonal veggies.
  • 2 Cage-free eggs!
    • Spend the extra dough for some happy chickens 
    • Separate out the yolks and whites. Keep one yolk and discard the other.
  • ½ cup kale chopped
  • ½ cup grape tomatoes
  • 4 black olives chopped
  • 1 tablespoon Ricotta cheese
  • ½ cup Black beans - drain 
*ProTip! Sauté the kale first until it's wilted. This process will alleviate the bitterness. 
 
The Magic: Add the tomatoes and black olives. Cook for a couple minutes until fragrant, then add the eggs. Mix. Add the cheese. Remove the pan from the heat once the egg start to coagulate. Sprinkle the top with ½ cup black beans. Add salt and pepper for taste.
